Mindy Knows Homemade Pad Thai

Thank you, Trader Joes! $1.69 gets you flat noodles and sauce. Just add your own chicken (I get my local grocer to cut it into strips), 2 scrambled eggs, peanuts, a medley of peppers and onion, and you, too, can have homemade Pad Thai!


Here's my version (disregard the melon in the background):



1. Gather your ingredients 


2. Heat pan over medium heat. I use a wok 
3. Drizzle 1 Tbsp olive oil
4. Crack two eggs and scramble. Remove and set aside.
5. In a separate sauce pan, start boiling water on high for noodles. 
6. Once water reaches a boil, drop noodles in water, cover, and turn off heat. 
Set timer for 3 minutes so you know when to strain and run under cool water.


7. Drizzle 2 Tbsp olive oil.
8. Stir fry chicken in wok. 
9. Add chopped peppers and onion. 
Remember to keep them moving around the pan!




10. Add chopped peanuts



11. Add egg scramble


12. Add noodles


13. Add sauce from packet


14. Mix well and enjoy!
